Homemade Ramen
This homemade ramen is wayyyy better than anything I used to eat back in college. I decided to pair it with a coconut curry broth and a variety of greens. Simple and delicious.
Ingredients:
1 package of ramen noodles (try to find authentic ramen, usually sold in Asian grocery stores)
6 oz. mushrooms
1 can coconut cream
1 small onion
2 stalks celery
4 bulbs of bok choy
2 green onions
1-2 Tablespoons Himalayan Pink Sea Salt
1 teaspoon black pepper
1 teaspoon fresh thyme
1 Tablespoon curry powder
Directions:
Noodles: Bring 4 quarts of water to a boil. Add noodles and boil for 4 minutes. Drain.
Broth: Chop mushrooms, onion, celery, and bok Choy. Sauté in a large saucepan over medium heat for a few minutes, until vegetables soften. Add coconut cream and seasonings. Simmer on low for 10 minutes.
To serve, add noodles to an individual bowl. Top with broth and greens. Sprinkle with diced green onion.
